Innovation born of necessity
Las Lajas is a celebrated micro‑mill in Costa Rica’s Central Valley, run by third‑generation producers Francisca and Oscar Chacón. They reshaped their future in 2009, when a 6.1 magnitude earthquake cut off power and water during peak harvest. Since they couldn’t employ the typical washed process, they had to test natural and honey processing to save their crop.
What first appeared as a limitation ended up revealing exciting new depth and character in their coffee.
Today, the Chacóns are recognized as pioneers of these processes, inspiring producers across Costa Rica to explore more expressive, quality‑driven approaches. We are so proud to share this Costa Rica Las Lajas – Natural, each cup reflecting the resilience and creativity that define their efforts.
